There is a reviewDueDate associated with each review, and generally editors are assigned before reviews are assigned, so this information probably won't be available at the time the EDITOR_ASSIGN email is composed.
However, you can find the variable assignments for these emails as follows:

- REVIEW_CONFIRM and REVIEW_DECLINE: classes/submission/reviewer/ReviewerAction.inc.php approx. line 98
- REVIEW_COMPLETE: classes/submission/reviewer/ReviewerAction.inc.php approx. line 180
If you need to find additional ones, search the PHP code for the symbolic name of the email (e.g. REVIEW_COMPLETE); you'll find it in the constructor for an ArticleMailTemplate or MailTemplate object, such as:
