This first screens shows the article just after being sent to copyediting. You should have something similar to this.
You don't actually need to "complete" the copyediting, especially the author's step. Only yours, if you want.
Notice how the proofreading is set.

This next screen shows how it looks after completing the copyediting.
Again, notice how the proofreading is set, still open

To make sure the article leaves the "In editing" queue, you must close the proofreading.

The availability of email icons (proofreading and copyediting) may depend on configuring the roles for other people or editors. I'm not quite sure, as this install is not fully configured. Check your settings for an accurate confirmation.
However, you should have the links as displayed on the screenshots.
