Hi fireport,
There's no way currently to see a complete tag list (although it's been requested:
http://pkp.sfu.ca/bugzilla/show_bug.cgi?id=4564). However, those tags are either pulling user-supplied information from the database (eg. name, username, biographical information etc.), which can be entered in multiple locales where it makes sense; or they are pulling locale information that should be found in the various locale files in the system (most likely from locale/it_IT/locale.xml). There's plenty of information on translating OJS
here. If you need any further help, just let us know.
Cheers,
James

(One more thing: if you have a bit of locale text you want to change, the easiest way to find it is to search across the entire install if at all possible. Some folks use grep to do this; I use a program called Textmate to work on a given set of files, and search across them; if you have a local copy of your codebase you may be able to use some sort of operating system file search across the whole folder.)
