Hello all,
Iam customizing the OCS 2.1.1.Is it possible to customize it in such away that one installation can host multiple conferences and workshops?.How to do that?

Yes, you can do that -- you will find instructions in OCS in an Hour, on the OCS documentation page: http://pkp.sfu.ca/ocs_documentation.

I have read through "OCS in an Hour" but it's still not clear to me how this works.
Ideally, I would like to use the OCS so that individuals or groups can manage their own conferences independently from others.
I imagine this might be done by creating multiple Conference Managers.
Eg CM1 looks after one range of conferences, CM2 looks after another and so on. and each is completely separate.
Any comments/suggestions appreciated.

That's the whole idea. OCS is a conference manager system.
Create the conferences you want under the application, create a conference admin for each one, and then each conference admin creates individual conferences from there.
What is your infrastructure beyond that? If you are trying to do something complicated, or really elaborate, then consider making a default installation and make as many copies as you need admins and let them run under separate domains. But OCS is designed to work as a server, not a conference web only.
