I'm a novice OJS user and would appreciate your comments. Is it feasible to just use the manuscript management component of OJS?

Hi Lisa,
Yes -- take a look at Journal Setup Step 4.1. You can disable the manuscript publishing component of OJS, and just use it for article submission and workflow management (eg. for Review and Editing). As much or as little of any of those workflow components can be used as well.
